Mini Pulled Pork Quesadillas

Mini Pulled Pork Quesadillas
  • ½ pound pulled pork
  • 4 T Roasted chile peppers, minced
  • 8 T adobo sauce
  • ½ cup sour cream
  • 1 cup shredded cheddar
  • 5 green onions, minced
  • 12 5-inch tortillas
  1. Toss the pulled pork with 4 tablespoons of the adobo sauce and set aside. Mix the other 4 tablespoons of the adobo with the sour cream.
  2. Build the quesadillas with the cheese, pulled pork mixture, diced chiles and more cheese.
  3. Cook on a hot pan or griddle until brown and then flip and finish cooking the other side.
  4. Remove from heat and drizzle the adobo sour cream sauce and garnish with the green onions.
