Waffled Breakfast Quesadilla
 
Serves: 4
Ingredients
  • 8 Chia Tortillas
  • 2 cups egg whites, cooked
  • 1½ cups kale, shredded and charred
  • 1 cup quinoa, cooked
  • ¾ cup feta
  • ¾ cup Monterey Jack cheese, shredded
  • Salt & pepper to taste
Instructions
  1. Heat waffle iron. Spray with canola oil.
  2. Put together a quesadilla with the 2 chia tortillas, kale, quinoa, cheeses, and salt & pepper.
  3. Grill for 1­-2 minutes, or until cheese is melted.
