Peaches & Cream
 
Serves: 4
Ingredients
  • 1 package 6" whole grain Fresca tortillas (cut into triangles)
  • 1¼ tsp cinnamon, divided
  • 2 T granulated sugar
  • 3 large peaches
  • 1 T butter
  • 3 T brown sugar
  • 1 tsp lemon juice
  • ¼ tsp nutmeg
  • 3 T plain Chobani yogurt
Instructions
  1. Mix together 1 tsp cinnamon and granulated sugar.
  2. Cut tortillas into triangles. Sprinkle with cinnamon sugar and bake at 400°F for 10 minutes.
Peach Mixture
  1. Peel peaches and cut into ¼ inch dice.
  2. Heat pan on med­ium-high heat and add butter, brown sugar, lemon juice, nutmeg and ¼ tsp cinnamon.
  3. Cook for 5-­7 minutes until peaches are slightly caramelized.
  4. Remove from heat and place in a bowl and let cool for a few minutes.
  5. Stir in yogurt and enjoy!
